  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup (40g) grated parmesan cheese, divided
  • 2 cups (about 220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Peel and thinly slice the potatoes using a mandoline slicer for uniformity.
  4. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the grated parmesan cheese, thyme, nutmeg, salt, and pepper; stir until well combined.
  5. Squeeze out the roasted garlic cloves into a bowl and mash into a paste; mix into the cream mixture.
  6. Layer sliced potatoes in the baking dish and pour the cream mixture over them.
  7. Cover with foil and bake for 40 minutes; then remove foil and sprinkle remaining cheeses on top and bake for another 30 minutes until golden brown.
  8. Let cool slightly before serving; garnish with fresh chives.
