  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 2 cups (about 220g) shredded Gruyère or mozzarella cheese
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the top off the head of garlic, drizzle with olive oil, season with salt, wrap in foil, and roast for about 30 minutes.
  3. Grease a 9×13-inch baking dish with butter.
  4. Peel and thinly slice the potatoes; layer them upright in the baking dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half the parmesan cheese, thyme, nutmeg, salt, and pepper; stir until combined.
  6. Squeeze the roasted garlic cloves into a bowl and mash into a paste; mix into the creamy mixture.
  7. Pour the creamy mixture over the layered potatoes.
  8. Cover with foil and bake for about 40 minutes.
  9. Remove foil, top with remaining cheeses, and bake uncovered for an additional 30 minutes until golden brown and bubbly.
  10. Let cool for a few minutes before garnishing with fresh chives and serving.
