  • 1 head garlic
  • 2 pounds red potatoes
  • 6 tablespoons butter
  • 3/4 cup half-and-half
  • 1 tsp olive oil
  • kosher salt
  • fresh ground pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes until soft.
  2. While the garlic roasts, place quartered red potatoes in a pot, cover with cold water, add salt, and bring to a boil. Cook for about 15 minutes or until fork-tender.
  3. Drain potatoes and return them to the pot with roasted garlic cloves squeezed out.
  4. Warm butter and half-and-half together until melted; pour over potatoes and garlic.
  5. Mash until creamy but keep some texture; season with salt and pepper to taste.
