  • 1 head roasted garlic (1215 cloves)
  • ¼ cup salted butter
  • ½ cup vegetable or chicken broth
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • Heavy cream (⅓-½ cup to preference)
  • Fresh thyme
  • Chopped parsley

Instructions

  1. Spray the inside of a slow cooker with cooking spray. Add chopped potatoes, roasted garlic, butter, thyme, salt, pepper, and broth. Stir gently to combine.
  2. Cover and cook on high for 4–5 hours or low for 7–8 hours until potatoes are fork-tender.
  3. Mash with heavy cream to desired consistency using a hand mixer or potato masher.
  4. Adjust seasoning if necessary and fold in chopped parsley before serving.
