  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • kosher salt (to taste)
  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top quarter inch of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 60 minutes until soft.
  2. Place quartered red potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Cook until fork-tender (about 15 minutes).
  3. Drain potatoes and return them to the pot. Squeeze in roasted garlic cloves.
  4. Warm butter and half-and-half together until melted; pour over potatoes. Season with salt and pepper before mashing to desired consistency.
