  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cup white granulated sugar
  • 2 large eggs
  • 5 tbsp unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Spread halved cherries on a parchment-lined baking sheet, sprinkle with sugar, and roast for about 10 minutes until tender.
  2. Reduce oven temperature to 325°F. Prepare an 8×8 inch pan with non-stick spray and parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. Beat sugar, eggs, and egg yolk for about five minutes until light and fluffy. Add melted butter, oil, and vanilla; mix until combined.
  5. Gently fold in dry ingredients and half of the roasted cherries along with chocolate chips.
  6. Pour batter into the prepared pan and smooth out evenly. Bake for 40-50 minutes; edges should be set while the center remains slightly underdone.
  7. Cool completely in the pan before cutting into squares.
