  • 8 ounces ricotta cheese
  • 1 crusty bread loaf
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)

  1. Preheat oven to 400ºF. In a baking dish, combine cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for about 20 minutes until bursting.
  2. In a blender, mix ricotta cheese with 1 minced garlic clove, 1 tablespoon olive oil, half a cup of fresh basil leaves, salt, and pepper until smooth. Chill until ready to use.
