  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces ground turkey or chicken
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • fresh cracked pepper
  • fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté diced onion with salt and pepper until soft (3-4 minutes).
  2. Add minced garlic and Italian seasoning; sauté for 30 seconds. Stir in tomato paste and cook for 1 minute.
  3. Add ground turkey or chicken, breaking it up while cooking until browned.
  4. Pour in chicken broth, crushed tomatoes, and ravioli; season with salt and pepper. Bring to a simmer; reduce heat and cook for 3-5 minutes until ravioli is tender.
  5. Stir in fresh spinach and heavy cream until warmed through.
  6. Serve garnished with parsley.
