  • 1 tbsp pumpkin pie spice
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk, at room temperature
  • 6 tbsp unsalted butter, cold
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix cold butter, brown sugar, flour, and salt for the streusel until crumbly; set aside.
  3. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In a separate bowl, combine melted butter, granulated sugar, eggs, vanilla extract, pumpkin puree, and buttermilk until smooth.
  5. Gently fold the wet ingredients into the dry ingredients until just combined.
  6. Fill muffin tins about 2/3 full with batter and top generously with streusel.
  7. Bake for 20 minutes or until a toothpick inserted comes out clean.
