  • 110g coconut oil or sunflower oil
  • 170g pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200g all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100g powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a small springform pan.
  2. In a mixing bowl, beat together the eggs and sugar until thick and frothy.
