  • ¾ Cup brown sugar (packed)
  • ¼ Cup granulated sugar
  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • Extra chocolate chips, mini vegan marshmallows, and graham crackers for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until combined. Optionally mix in food coloring for festive flair.
  4. In another bowl, whisk flour, baking soda, pumpkin pie spice, and salt together.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Fold in chocolate chips, mini vegan marshmallows, and broken graham crackers.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet about 2 inches apart.
  8. Top each cookie with extra marshmallows, chocolate chips, or graham cracker pieces.
  9. Bake for 12-14 minutes until edges are golden but centers are soft.
  10. Cool on the baking sheet briefly before transferring to a wire rack.
