  • 1 Β½ cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • Β½ teaspoon baking soda
  • Β½ teaspoon salt
  • 2 cups pumpkin puree
  • Β½ cup granulated sugar
  • ΒΌ cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Β½ cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350Β°F (175Β°C) and prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
  3. Press two-thirds of the mixture into the bottom of the prepared dish for the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crust and spread evenly.
  6. Top with remaining crumble mixture and optional nuts.
  7. Bake for 30-35 minutes until golden brown. Allow cooling before slicing.
