  • 1/4 cup + 1 tablespoon milk (room temperature)
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  2. In a bowl, sift together the all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, and spices until well combined.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry mixtures gently until just combined; pour into the prepared dish.
  5. For the topping: combine granulated sugar, brown sugar, cinnamon, and chopped pecans in a small bowl; sprinkle over the batter.
  6. Carefully pour hot water over everything without stirring.
  7. Bake for about 40 minutes until set in the center; let cool for 5 minutes before serving.
