  • 2 cups whole milk
  • 4 eggs (yolks separated from whites)

  • 1 1/2 cups confectioner’s sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree (not pie filling)
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare an 8×8 or 9×9 inch baking dish with parchment paper.
  2. Warm the milk until lukewarm and set aside.
  3. Beat egg whites with cream of tartar until stiff peaks form.
  4. Melt butter and let cool slightly.
  5. In a separate bowl, beat egg yolks and confectioner’s sugar until pale; add vanilla, cinnamon, pumpkin pie spice, and melted butter.
  6. Stir in flour followed by pumpkin puree and a quarter cup of warmed milk.
  7. Slowly mix in remaining milk until smooth.
  8. Carefully fold in beaten egg whites until just combined.
  9. Pour into the prepared dish and bake for 60-65 minutes until golden brown.
  10. Cool completely before slicing; refrigerate for best texture.
