  • Mini pumpkins or ramekins
  • 2 cups Heavy Cream
  • 1/3 cup Granulated Sugar
  • 4 large Egg Yolks
  • 1 tsp Vanilla Extract
  • 1 cup Pumpkin Puree
  • 1/2 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/4 tsp Salt
  • Additional granulated sugar for topping

Instructions

  1. Prepare mini pumpkins by cutting off tops and scooping out insides, or set ramekins aside.
  2. In a saucepan over medium heat, combine heavy cream and sugar until dissolved.
  3. Whisk egg yolks in a separate bowl until pale; gradually add warm cream mixture while whisking.
  4. Stir in pumpkin puree, vanilla, cinnamon, ginger, and salt until well combined.
  5. Fill prepared containers with custard mixture; do not overfill.
  6. Bake in a water bath at 325°F (163°C) for about 30 minutes or until edges are set.
  7. Cool completely, then refrigerate for at least 2 hours.
  8. Before serving, sprinkle sugar on top and caramelize using a kitchen torch.
