  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 can (20 oz) pineapple slices, drained and cut into small pieces
  • Maraschino cherries, halved
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with parchment paper.
  2. In a small bowl, combine melted butter and brown sugar, then spoon 1 tablespoon into each muffin cup.
  3. Add small pieces of pineapple on top of the brown sugar mixture, followed by half a maraschino cherry in each cup.
  4. In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla until well combined.
  5. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  6. Press 1 ½ tablespoons of dough over the topping in each muffin cup, flattening gently.
  7. Bake for 12-15 minutes or until edges are lightly golden brown.
  8. Allow to cool in the muffin tin for 5 minutes before flipping onto a cooling rack.
