  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • ½ cup Brown Sugar
  • 2 tbsp Melted Butter
  • 1 small can Pineapple Rings cut into pieces or fresh pineapple
  • halved Maraschino Cherries or fresh cherries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together softened butter and sugar until fluffy. Mix in egg and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt; then gradually combine with wet ingredients.
  4. In an 8-inch square baking dish, melt butter and sprinkle brown sugar evenly. Layer with pineapple pieces and cherries.
  5. Drop spoonfuls of cookie dough over the topping—don’t worry about covering everything completely.
  6. Bake for 12-15 minutes until edges are golden brown.
  7. Cool in the pan for 10 minutes before flipping onto a platter.
