  • 3 (8-oz.) blocks cream cheese, softened
  • 1 cup packed brown sugar
  • 3 large eggs
  • 1/4 cup sour cream
  • 2 tbsp all-purpose flour
  • 1 sleeve graham crackers, finely crushed
  • 4 tbsp butter (for topping)
  • 1 3/4 cups whole or chopped pecans
  • 1/4 tsp kosher salt
  • 1 tsp pure vanilla extract
  • 5 tbsp butter, melted
  • 1/4 cup heavy cream
  • 1/2 tsp ground cinnamon
  • 1/4 cup packed brown sugar (for crust)
  • Pinch of kosher salt (for crust)

Instructions

  1. Preheat your oven to 325ºF and grease an 8" or 9" springform pan.
  2. In a bowl, beat together cream cheese and brown sugar until smooth. Add eggs one at a time, followed by sour cream, flour, vanilla extract, and salt.
  3. In another bowl, combine graham cracker crumbs, melted butter, brown sugar, and salt. Press into the bottom of the springform pan.
  4. Pour filling over the crust and bake for about 1 hour and 30 minutes or until slightly jiggly in the center.
  5. Allow to cool in the oven with the door ajar for an hour before refrigerating overnight.
  6. For topping: melt butter and brown sugar in a skillet; add cinnamon, heavy cream, pecans, and salt—stir until coated.
  7. Serve by spooning topping over chilled cheesecake.
