  • 2 sheets puff pastry
  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces cream cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced

Instructions

  1. In a saucepan, combine blackberries, water, lemon juice, and sugar. Cook over medium heat for 20-30 minutes until thickened, smashing the berries well. Allow to cool.
  2. Thaw puff pastry sheets for about 20 minutes. Roll each into a rectangle and spread half of the cream cheese and blackberry jam on one sheet.
  3. Cut dough into 12 strips, fold each in half, and twist gently.
  4. Preheat oven to 400°F (200°C). Brush pastries with egg wash and sprinkle with lemon-thyme sugar mixture. Bake for 16-18 minutes until golden brown.
