  • 2 lbs red potatoes
  • 1 stick (1/2 cup) butter
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F (204°C) with a baking pan containing 1 stick of butter inside to melt.
  2. Cut washed red potatoes in half and score the cut sides lightly.
  3. In a bowl, mix Parmesan cheese, herb seasoning, salt, and black pepper.
  4. Once the butter is melted, sprinkle the seasoning mixture in the pan and place potatoes cut-side down on top.
  5. Spray tops with nonstick spray and add remaining herb seasoning.
  6. Bake uncovered for about 40 minutes or until tender and crispy.
