  • 1 lb ground turkey or chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream (or dairy-free alternative)
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Dried basil and oregano to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Add the sausage and cook until browned. Remove sausage but leave drippings.
  2. Sauté diced onion and minced garlic in the same pot for about 3–4 minutes until soft.
  3. Stir in drained tomatoes, chicken stock, basil, and oregano. Return the sausage and simmer for 10 minutes.
  4. Add ditalini pasta and cook until al dente (8–10 minutes).
  5. Lower heat and stir in heavy cream and Parmesan cheese until melted.
  6. Season with salt and black pepper before serving hot, garnished with chopped parsley.
