  • 1 whole chilled duck
  • ½ teaspoon sea salt (if not brined)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon cracked black pepper
  • Fresh rosemary sprigs
  • Fresh thyme sprigs
  • ½ cup orange juice
  • 2 tablespoons fig jam
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce or coconut aminos
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon corn starch

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse the chilled duck under cold water and pat dry. Season the inside with salt (if applicable) and stuff with fresh herbs.
  2. In a bowl, combine garlic powder, oregano, thyme, and black pepper; rub evenly over the duck's skin.
  3. Place the duck breast-side up on a roasting rack in a baking dish and roast for about 90 minutes until crispy.
  4. For the glaze, combine orange juice, fig jam, maple syrup, soy sauce, balsamic vinegar, and corn starch in a saucepan. Simmer until thickened for about 5-7 minutes.
  5. Brush the glaze over the duck during the last 10-15 minutes of roasting to caramelize.
