  • 2 teaspoons dried oregano, divided
  • 2 teaspoons dried thyme, divided
  • 6 tablespoons butter
  • 1 cup yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 4 tablespoons flour
  • 8 cups chicken broth
  • 8 oz. uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz. sharp cheddar cheese, shredded
  • 1 teaspoon white balsamic vinegar
  • Kosher salt to taste
  • Fresh cracked pepper to taste
  • 4 sesame seed buns, diced into 1-inch pieces
  • 2 tablespoons olive oil
  • Sliced green onion, for garnish
  • Shredded cheddar cheese, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare croutons by tossing diced sesame seed buns with olive oil and baking until crispy.
  2. In a large pot over medium heat, brown the ground beef seasoned with oregano, thyme, salt, and pepper. Remove once cooked.
  3. Sauté diced onion, carrots, celery, and seasoning in butter until tender.
  4. Add minced garlic and remaining herbs; cook until fragrant.
  5. Stir in flour to coat vegetables; cook briefly.
  6. Deglaze the pot with chicken broth before adding the rest along with elbow macaroni.
  7. Bring to simmer; cook until pasta is al dente.
  8. Stir in heavy cream, cheddar cheese, vinegar, and return beef to pot; mix well.
  9. Serve warm topped with croutons and garnishes.
