  • 14 oz turkey sausage or chicken sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni (or your favorite short pasta)
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • Optional garnish: fresh parsley or green onions

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced turkey or chicken sausage and brown for 4-5 minutes. Remove and set aside.
  2. In the same pot, sauté minced garlic for 30 seconds until fragrant.
  3. Stir in elbow macaroni, chicken broth, whole milk, smoked paprika, black pepper, and salt. Bring to a gentle boil, then reduce heat and simmer covered for 8-10 minutes until pasta is tender.
  4. Reduce heat again and add sharp cheddar cheese, mozzarella cheese, and butter; stir until melted and creamy.
