  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Brown the sliced sausage for about 4–5 minutes; remove from the pan.
  2. In the same skillet, sauté diced onion and bell pepper for 3–4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in smoked paprika and black pepper. Add uncooked rice and toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; mix well and return browned sausage to the skillet.
  5. Bring to a boil, then cover and simmer on low heat for 20–22 minutes until rice is tender and liquid is absorbed.
  6. Let rest for 5 minutes before fluffing with a fork. Garnish with fresh parsley before serving.
