  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

  1. Line an 8-inch or 9-inch square baking dish with parchment paper.
  2. In a large saucepan over medium heat, melt the butter and brown sugar until smooth; stir in the vanilla extract.
  3. Add rolled oats to the mixture and cook on low heat for about 3-4 minutes until blended.
  4. Pour half of the oat mixture into the prepared dish, pressing it down evenly.
  5. In a microwave-safe bowl, melt the peanut butter and chocolate chips until smooth; reserve 1/4 cup for drizzling.
  6. Spread the melted chocolate mixture over the oat layer and top with the remaining oat mixture.
  7. Drizzle reserved chocolate on top and chill in the refrigerator for 2-3 hours before cutting into bars.
