  • 1 large onion, diced
  • 4 garlic cloves, rough chopped (24 more for garnish, sliced)
  • 1 lb cremini mushrooms, sliced (or use mushrooms of your choice)
  • 1/2 teaspoon salt
  • 1 tablespoon fresh rosemary, chopped (or thyme)
  • 1/4 cup apple juice or vinegar
  • 5 tablespoons flour (or GF flour)
  • 3 cups hot vegetable broth
  • 1/2 cup to 1 cup sour cream (or use vegan sour cream or cashew cream)
  • Pepper to taste

Instructions

  1. Heat olive oil or butter in a large pot over medium-high heat. Sauté diced onion for 3-4 minutes until golden, then add chopped garlic and sauté for an additional 2 minutes.
  2. Add sliced mushrooms, salt, and rosemary; cook for 10-12 minutes until mushrooms are tender and liquid has evaporated. Pour in apple juice or vinegar.
  3. Lower heat, stir in flour until well combined. Gradually add hot vegetable broth while stirring continuously to deglaze the pot.
  4. Mix in sour cream until smooth; season with pepper and adjust salt as needed.
  5. For garnish, prepare crispy garlic chips by frying thinly sliced garlic in oil until golden brown.
  6. Serve warm, garnished with crispy garlic chips and drizzled with truffle oil if desired.
