  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly to blend flavors.
  2. If the mixture is too dry, add almond milk one tablespoon at a time until the desired consistency is reached.
  3. Fold in mini dark chocolate chips gently.
  4. Roll about 1 tablespoon of the mixture into balls and place on a parchment-lined baking sheet.
