  • 1 can (14.5 ounces) diced tomatoes (undrained)
  • 4 cups beef broth
  • 1 cup water
  • 1/2 cup long-grain white rice
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 cup frozen corn
  • Salt and pepper (to taste)
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • Shredded cheese
  • Sour cream
  • Sliced avocado
  • Tortilla strips or chips
  • Extra lime wedges

Instructions

  1. In a large pot over medium-high heat, heat the olive oil and brown the ground beef until cooked through. Drain excess fat.
  2. Add diced onion, bell pepper, and jalapeño (if using) to the pot; sauté until soft. Stir in minced garlic.
  3. Mix in the cumin, chili powder, smoked paprika, and oregano; cook for another minute before adding diced tomatoes.
  4. Pour in beef broth and water; bring to a boil. Stir in rice; reduce heat to low and simmer for about 15 minutes.
  5. Add black beans and corn; simmer for an additional 5 minutes until heated through.
