  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes.
  2. Cook the chicken: Heat a skillet over medium heat and cook the marinated chicken for 5–6 minutes on each side until golden brown and cooked through. Let rest before slicing.
  3. Assemble the bowls: Divide cooked rice or quinoa into bowls. Top with sliced chicken, cherry tomatoes, cucumber, red onion, and crumbled feta.
  4. Add sauce & garnish: Drizzle tzatziki over each bowl and sprinkle with fresh parsley before serving.
