  1. In a large pot over medium heat, heat vegetable oil. Gradually whisk in flour to create a roux; stir constantly until it turns dark brown (20–30 minutes).

  3. Stir in minced garlic, Cajun seasoning, thyme, and bay leaf; cook for an additional minute.
  4. Slowly add seafood stock or chicken stock while stirring to prevent lumps; bring to a boil.
  5. Add turkey sausage; reduce heat and simmer for about 20 minutes.
  6. Incorporate shrimp and crabmeat (and optional oysters); simmer gently for another 10–15 minutes until cooked through.
