  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 can (15oz) white beans (Cannellini, Navy, or Great Northern)
  • 1 cup veggie broth
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté onion and garlic until soft (3-5 minutes).
  2. Add chopped tomatoes, cumin, paprika, turmeric, tomato paste, salt, and pepper. Cook until fragrant.
  3. Stir in canned white beans and veggie broth; let it simmer.
  4. For Instant Pot: Secure lid and cook on high pressure for 10 minutes. For stovetop: Cover and simmer for about 25 minutes.
  5. Adjust seasoning if needed before serving hot.
