Scale
  • 1 ball Easy pizza dough (or store-bought dough)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 150 grams fresh mozzarella (or ½ to cup shredded firm mozzarella)
  • 2 tablespoons grated parmesan cheese

Instructions

  1. Prepare the dough by following your favorite no-knead recipe or using store-bought options.
  2. Preheat your oven and pizza stone to ensure a crispy crust.
  3. Slice fresh mozzarella into thick pieces and pat dry to avoid sogginess.
  4. Roll out the dough on parchment paper into a rectangle shape.
  5. Combine olive oil, water, chopped parsley, grated garlic, lemon zest, lemon juice, salt, and black pepper in a jar; shake well to create the brine.
  6. Make dimples in the shaped dough and pour the brine evenly across the surface.
  7. Scatter mozzarella over the top of the dough.
  8. Bake for about 8–10 minutes until golden brown.
  9. Finish with additional lemon juice, parmesan cheese, and parsley before serving.
