  • 200 grams ground beef
  • 400 grams lean ground beef
  • olive oil
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml white grape juice
  • 100 grams onion (minced)
  • 4 garlic cloves (minced)
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano (+ extra to serve with)
  • 2 teaspoons dried parsley (or fresh minced)
  • 1 teaspoon fine sea salt (+ extra for the sauce)
  • ½ teaspoon ground pepper (+ extra for the sauce)
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot water or stock (vegetable, beef, or chicken stock)
  • 810 tablespoons lemon juice

Instructions

  1. In a large bowl, mix ground beef, egg, bread, white grape juice, onion, garlic, cumin, oregano, parsley, salt, and pepper until combined.
  2. Shape the mixture into golf ball-sized meatballs and set aside.
  3. Heat olive oil in a skillet over medium heat. Cook the meatballs until browned on all sides (about 10 minutes) then remove from skillet.
  4. For the sauce: Melt butter in the same skillet, whisk in flour until smooth. Gradually add hot water or stock and stir until thickened.
  5. Stir in lemon juice and return meatballs to the skillet. Simmer for 10-15 minutes to let flavors meld.
  6. Serve hot with garnishes like parsley and lemon wedges.
