  • ½ cup breadcrumbs
  • 1 can (14 oz) crushed tomatoes
  • 6 cups chicken or vegetable broth
  • 2 cups fresh spinach (or kale)
  • 1 cup small pasta (like ditalini or orzo)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper. Form into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides (about 5 minutes), then set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened. Add garlic and cook for another minute.
  4. Stir in crushed tomatoes and broth with basil and oregano. Bring to a simmer.
  5. Return meatballs to the pot and simmer for 15-20 minutes until cooked through.
  6. Add spinach (or kale) and pasta; cook until pasta is al dente (8-10 minutes).
  7. Serve hot with optional garnishes like Parmesan cheese or fresh herbs.
