  • 3 pounds beef stew meat (or lamb)
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • Fresh herbs (rosemary and thyme)
  • Mashed potatoes for serving

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. Combine beef stew meat with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme in a ziplock bag. Shake well to coat.
  3. Sear the seasoned meat in the hot oil until browned.
  4. Stir in beef broth and bring to a boil.
  5. Add carrots and bay leaves; reduce heat and simmer for 45 minutes.
  6. In the last five minutes, add frozen peas.
  7. Remove bay leaves before serving with fluffy mashed potatoes.
