  • 4 beef sausages
  • 1 large onion, sliced
  • 4 large potatoes, peeled and sliced
  • 2 large carrots, peeled and sliced
  • 3 cups chicken broth
  • 2 cloves garlic, minced

  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the beef sausages over medium heat until golden. Remove from pot and set aside.
  2. In the same pot, add chopped bacon (or use turkey bacon) and cook until crispy.
  3. Stir in sliced onions and minced garlic; sauté for about two minutes until softened.
  4. Layer in the sliced potatoes and carrots evenly over the onion mixture.
  5. Pour in chicken broth and season with thyme, salt, and pepper.
  6. Return sausages to the pot and bring everything to a boil. Reduce heat to low; let simmer for about an hour until all ingredients are tender.
  7. Serve hot with a sprinkle of fresh parsley on top.
