  • 2 large room temperature eggs
  • 1/4 cup vegetable oil (or canola or melted coconut oil)
  • 1/3 cup sour cream (or substitute with Greek yogurt)
  • 1/4 cup white sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla essence
  • 1 1/2 cups tightly packed finely grated zucchini
  • 1 cup semi-sweet chocolate chips (split for use)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat eggs; then add oil, sour cream, sugars, and vanilla essence until well combined.
  4. Gently fold wet ingredients into dry ingredients until just combined.
  5. Fold in grated zucchini and half of the chocolate chips.
  6. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  7. Bake for about 55 minutes or until a toothpick inserted comes out clean. Cool before slicing.
