  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 4 ounces brie cheese, cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). In a medium saucepan, heat olive oil over medium heat and add cranberries. Cook until softened, then stir in honey, orange juice, cinnamon, ginger, salt, and black pepper. Cook until slightly thickened; set aside to cool.
  2. Cut pockets into the chicken breasts and fill each with brie cheese and cooled cranberry mixture. Secure openings with toothpicks.
  3. Sear the stuffed chicken in an oven-safe skillet over medium-high heat until golden brown on both sides. Mix panko breadcrumbs with melted butter and sprinkle on top.
