  • 1 cup (200g) light brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon salt
  • 3 cups (270g) old-fashioned rolled oats
  • 2 cups (240g) powdered sugar, sifted
  • 34 tablespoons milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy.
  3. Beat in eggs one at a time followed by vanilla extract.
  4. In another bowl, whisk together flour, baking soda, cinnamon, and salt; gradually add to the wet mixture.
  5. Fold in rolled oats gently and spread batter into the prepared baking dish.
  6. Bake for 25-30 minutes until golden brown; cool completely before icing.
  7. For the icing, mix powdered sugar with milk or cream and vanilla until smooth; spread over cooled bars.
