  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Begin by boiling salted water and cooking the rigatoni according to package directions until al dente. Drain and set aside, saving some pasta water.
  2. In a skillet over medium-high heat, warm two tablespoons of olive oil and sear the seasoned chicken until golden brown and cooked through (about 5-7 minutes). Set aside.
  3. Using the same skillet, add remaining olive oil and sauté sliced carrots until slightly softened (around 3-4 minutes). Stir in minced garlic and cook for an additional minute.
  4. Lower the heat and add butter to melt, then mix in honey, soy sauce, and black pepper. Allow it to simmer for about 2-3 minutes until slightly thickened.
  5. Return the chicken to the skillet and combine everything well before adding the rigatoni. Toss gently to coat everything in the sauce, adding reserved pasta water if needed for desired consistency.
  6. Serve warm, garnished with chopped green onions.
