  • 1 tbsp butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 1 litre chicken stock
  • 250g cooked turkey
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Add leeks, carrots, celery, and thyme; sauté for about 5 minutes until softened. Stir in garlic and cook for another minute.
  2. Sprinkle flour into the pot and mix well. Gradually pour in chicken stock while scraping the bottom of the pot to deglaze. Bring to a boil and season with salt and pepper.
  3. Add potatoes, cooked turkey, and bay leaves. Cover and place in a preheated oven at 180°C/350°F for about 45 minutes.
  4. If desired, stir in cream before serving and garnish with fresh parsley.
