  • 2.5 lbs Yukon Gold potatoes, peeled and cubed
  • 4 tbsp unsalted butter or 3 tbsp olive oil + 1 tbsp butter
  • 1 large onion, finely chopped
  • 56 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • ½ cup heavy cream (optional)
  • 2 cups sharp cheddar cheese, shredded
  • Fresh herbs: parsley, chives, thyme
  • Salt and pepper to taste

Instructions

  1. Peel and cube the Yukon Gold potatoes; rinse under cold water.
  2. In a large pot, heat butter or oil over medium heat. Sauté onion for about 5-7 minutes until translucent. Add garlic and cook for an additional minute.
  3. Sprinkle in flour while stirring; cook for another minute to form a roux.
  4. Gradually whisk in the broth while scraping up any bits from the bottom until smooth.
  5. Add potatoes; bring to a simmer and cover for 15-20 minutes until tender.
  6. Blend half of the soup for creaminess and return it to the pot.
  7. Stir in milk and cream; add herbs and cheese gradually off heat until melted.
  8. Season with salt and pepper before serving.
