  • 2/3 cup maple syrup or honey
  • 1/4 cup plain or vanilla Greek yogurt (2%)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, combine whole wheat flour, ground cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gently fold the dry mixture into the wet mixture until just combined; do not overmix.
  5. Grease a muffin tin or line with paper liners. Fill each muffin cup about two-thirds full with batter.
  6. Bake for approximately 18 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool slightly before transferring to a wire rack.
