  • 2 cups full fat cottage cheese
  • 4 large eggs
  • 4 tbsp natural sweetener (erythritol, monk fruit sweetener, honey, maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)
  • 1 1/2 cups berries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a baking dish.
  2. In a blender, combine the cottage cheese and blend until smooth.
  3. Add in the eggs, sweetener, vanilla extract, and cornstarch. Blend again until well combined.
  4. Pour the mixture into the prepared baking dish and bake for 10-15 minutes until edges begin to set.
  5. Remove from the oven and evenly distribute the berries over the top.
  6. Return to oven and bake for another 30-35 minutes until golden on top.
  7. Allow to cool slightly before serving.
