  • 4 tablespoons melted unsalted butter (divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Place one potato between two chopsticks or skewers to prevent cutting all the way through. Slice vertical slits about ⅛ inch apart down the potato.
  3. Arrange sliced potatoes in an unlined baking dish and brush half of the melted butter over them, ensuring it seeps into the slits.
  4. Season generously with salt and pepper.
  5. Bake for 30 minutes until beginning to soften.
  6. After 30 minutes, gently pull apart the layers and brush with remaining butter.
  7. Return to the oven and bake for another 30-35 minutes until crispy and golden.
