  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion until softened (about 3-4 minutes), then add ground turkey, breaking it up as it cooks.
  3. Stir in minced garlic, diced bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for another 3-5 minutes.
  4. Transfer the mixture into the baking dish and cover with foil. Bake for 25 minutes until sweet potatoes are tender.
  5. Remove the foil, sprinkle cheese on top, and bake uncovered for an additional 10-15 minutes until bubbly.
