  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • Optional: diced tomatoes, shredded cheddar cheese, fresh cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a parchment-lined baking sheet for 40-50 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion until softened (3-4 minutes), then add garlic and bell pepper; cook for another couple of minutes.
  3. Add ground turkey to the skillet and cook until browned (6-8 minutes), stirring occasionally.
  4. Stir in spices: cumin, chili powder, paprika, salt, and pepper. Mix well.
  5. Add corn and optional diced tomatoes; cook for a few more minutes until heated through.
  6. Once sweet potatoes are ready, slice them open lengthwise and fluff the insides with a fork. Spoon in the turkey mixture.
  7. If desired, top with cheddar cheese and return to the oven for an additional 5-7 minutes until melted.
  8. Garnish with fresh cilantro before serving.
