  • 2 large sweet potatoes (about 1.5 lbs), peeled and diced
  • 2 tablespoons olive oil (divided)
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika (divided)
  • Salt and pepper to taste
  • Optional: cooked quinoa or brown rice, mixed greens, avocado, tahini dressing

Instructions

  1. Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, oregano, smoked paprika, salt, and pepper. Add chicken to the marinade and coat well. Let it marinate for at least 30 minutes.
  2. Roast the Sweet Potatoes: Preheat the oven to 425°F (220°C). Toss diced sweet potatoes with 1 tablespoon olive oil, half the smoked paprika, garlic powder, salt, and optional cayenne pepper. Spread on a parchment-lined baking sheet and roast for 25–30 minutes until tender and crispy.
  3. Grill the Chicken: Heat a grill pan over medium-high heat. Remove chicken from marinade (discard any leftover marinade) and grill for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F).
  4. Assemble Your Bowl: If using quinoa or brown rice, prepare according to package instructions. Layer your base with grains or mixed greens followed by sliced grilled chicken and roasted sweet potatoes.
  5. Top it Off: Add avocado slices and drizzle with tahini dressing for an extra flavor boost.
