  • ½ batch rough puff pastry or store-bought puff pastry
  • 1 cup fig jam
  • ½ cup caramelized onions, roughly chopped
  • 4 ounces goat cheese
  • Fresh thyme sprigs for garnish
  • Egg wash (1 egg whisked with 1 teaspoon water)

Instructions

  1. Preheat your oven to 400ºF and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a floured surface until about ⅛-inch thick. Cut into 2-3/4-inch circles (around 16).
  3. Dock each circle using a smaller cutter and place them on the baking sheet.
  4. Brush each circle with egg wash and add caramelized onions in the center.
  5. Chill while cutting goat cheese into small pieces (about ½-inch).
  6. Bake for about 12 minutes until puffy but not golden.
  7. Pipe fig jam into each tart and top with goat cheese pieces.
  8. Bake again for another 5-8 minutes until golden brown.
  9. Serve warm, garnished with fresh thyme leaves.
